Decorating for Christmas

My birthday is always in the week of Thanksgiving.. and I LOVE pecan pie, but not the modern version.
Two little old ladies had a roadside diner & pie store in the Shenandoah Valley, and for years we used to stop in every time we were in the area. They made the best pecan pie, and it was "the old way" per them. Oh, and the rest of their menu, outstanding.
Truly fond memories.Decades later, I have found what I think is the recipe (or close to it) that they used. The question is, do you think you could make it for me? FYI, I am not fond of Meringue or Ice Cream on a pie, so just plain is what I prefer (i.e. skip the meringue).
