It's Chocolate Eggnog Pudding time

One of the many things I like about this time of year this the appearance of pre-made eggnog.   Yes, I do make it myself anytime, but with everything going on it's just easier.

Besides just drinking it, I also make Chocolate Eggnog Pudding.   It's a 50/50 split of Eggnog and Milk.  It will work with lactose free milk if you want since there is enough fat in the eggnog, but using whole milk (like Trader Joe's 3.5%) is even better (most "whole" milk is 3%).   

Use 2 regular size Chocolate Fudge Pudding packets, 2 cups Eggnog, 2 cups Milk - whisk and scrape it together to get it blended, and then whisk 2 more minutes.  It makes 4 large 8oz  OR  8 small 4oz puddings ("normal" size).  Festive sprinkles on top if you wish.

I have used 1 of the family size and 1 regular size chocolate pudding packets with the same amount of dairy to make it even thicker for a pie filling.   Don't use sugar free pudding mix, what's the point this time of year.

Made these for a friend with lactose issues (she does cheat this time of year) and did the 4 large 8oz servings like shown below.

Does it set up well with the lactose free milk, because I find when I try and make pudding with lactose free milk or milk substitutes it doesn't set up as well.

As I mentioned (highlight below) it does work great.   Now if someone were to find Fat Free eggnog, I would suspect it might not work.  But what's the point of fat free eggnog, and I have never seen it.

We make ice cream almost like that. Never had chocolate eggnog. Interesting, thank you.
