scrap ingredients

What do you do when you have a few things for baking but not even enough for one recipe, make bread. I had bananas in the freezer and want to use them up before I get any more. I had some dates left and some dried mixed berries ( raisins, currents, and cranberries). So I decided to use all of my very little amount of ingredients and make like a banana bread with some little sweeteners in it. I diced the dates and berries real small and of course, smashed the bananas. Well it turned out very well.

2 bananas
1 cup of dates and various other goodies (dried berries)
1/2-3/4 cup of hot water (depends on how many dried fruits you use)
1 tsp. Baking soda
1/4 cup butter (room temp)
1/2 cup light brown sugar
2 eggs (room temp)
2 cups flour
2 tsp. Baking powder
pinch of salt
1/2 tsp of vanilla
walnuts or nuts optional
Bake at 350 degrees for about 50-60 minutes
grease pan/flour/parchment paper it, which ever you prefer. Chop up dates and berries (such as cranberries) into tiny bits as well as smash you bananas. Take your hot water and put in the chopped up fruits and baking soda, mix and let cool. Combine butter, brown sugar till smooth then add in eggs and vanilla and mix. Add bananas and your fruit water mixture and spoon mix (if use mixer, do it for a couple turns so not to over mix it) Now add the flour, salt, baking powder, Again, do not over mix. After it’s mixed, place it into your pan and bake. Depending on your oven, time may vary. I used my Ninja air fryer oven on Convection, and it used all the time. It may look done, but due to thickness of bread, check the center. It does get brown and still had 10 minutes, so just watch it. Hope it turns out for you all. Enjoy,
